It was at L’eau à la Bouche that I first began to understand fine French-Canadian cuisine…some might argue “the finest”. Chef Anne Desjardins is one of the best interpreters of the new provincial cuisine. She thoughtfully creates wonderful dishes with the traditional ingredients of old Quebec. Comfort food never tasted so good! A slim Gaspé salmon scallop on a little puddle of fennel scented butter sauce… quail breasts from the lower Laurentians atop a wintry mixture of cabbage and bacon…a colorful “confit” of red and yellow peppers spooned over thin slices of farm raised, spiced goose…and, of course, the foie gras, fresh and fatty and perfect. Each meal culminates with a selection of well-aged French and Quebec cheeses to spread on Anne’s savory nut bread and a plate of douceurs.
With her husband, Pierre who acts as hotelier and keeper of the award-winning wine cellar, and with her son, Emanuel, who is now in charge of the kitchen, Anne has effectively raised the bar of excellence all across the Province. She stars in her own television show Par-dessus le Marché with 700,000 viewers and is widely regarded as the Province’s culinary ambassador having received awards such as Knight of the Ordre National du Quebec and as the first female chef in Canada ( 9th in the world) to be honoured with membership in the Académie Culinaire de France.
Chef Anne Desjardins writes: My menus at L’eau à la Bouche truly have always have been very seasonal and local. I have encouraged local farmers and Canadian Cuisine since the 1980. We are inspired by the changing of the seasons and are proud to support local producers and culinary artisans. We insist the production methods and foraging is done with respect of the environment and in the most humane way possible. When possible we choose organic. Our cooking is between 85 – 90% Canadian, depending upon the season.
